Fancy a creamy soup for lunch? You will love this cream of broccoli soup.
It is a very healthy yet delicious recipe and it’s super creamy, without adding any cream or flour.
Since we are spending a lot more time at home these days, I know at least in our family – we’ve been craving quite a few takeaway dishes that are not really available at the moment.
So I thought I would try and recreate a few takeaway meals (or fakeaway, as they are called nowadays).
If you were used to getting a cream soup takeaway for lunch, this recipe is for you, so you can recreate that at home.

For lots of creamy soups, you usually add actual cream (cooking cream or soured cream) or flour, which is not necessary for this recipe. It will still turn out very creamy, whilst keeping it on the healthier side.
The secret is adding potatoes, as they make that creamy consistency of the soup.

I like to use one full broccoli head for this, as I find it usually gives more flavour. I simply cut the florets off the stem and pop them in the soup.
A budget-friendly tip:
A broccoli head is usually much cheaper than buying ready-cut broccoli florets. And it takes you literally 2 minutes to cut the florets yourself.
It’s the small things that add up. So next time you’re grocery shopping, keep that in mind if you’re looking for more budget friendly options.
Broccoli Cream Soup

Hearty root vegetable cream soup, packed full with nutrients, yet very delicious. No added cream or flour, to keep this recipe healthy.
Ingredients
- 1 broccoli head
- 1 onion
- 2 garlic cloves
- 2 carrots
- 2 large potatoes
- 1 parsnip
- 1 vegetable stock cube
- olive oil
- salt and pepper
Instructions
- In a pot, saute the chopped onion and the garlic cloves in a bit of olive oil.
- Add all the chopped vegetables: broccoli florets, carrots, potatoes and parsnip.
- Add the vegetable stock (cube) and add water until all the veggies are covered.
- Bring to a boil and let it simmer for about 20 minutes, until all the veggies are tender.
- Use a hand blender to blend the soup into a creamy consistency. Add salt and pepper to taste.
Notes
Serve a bowl of creamy soup with a side of cheese toasties.
